Kate,
Mother/child reading time calms down both parties at the end of a busy day.
Carle's books are classics. "Ain't Gonna Paint..." has pictures by one of my favorite illustrators, David Catrow. I feature him in some of my elementary library classes. Other books he's illustrated include "Rotten Teeth" (with Laura Simms), "Our Tree Named Steve" (by Alan Zweibel), and "I Wanna Iguana" (by Karen Kaufman Orloff).
So many books...so little time!

Diane - I couldn't agree more :-) Reading with my kids has been one of the greatest parts of motherhood and although my daughter can sit still for MANY more books than my son can, I just love when he toddles over to me with his favorite book in his hand. Thanks so much for these suggestions - I haven't read either of them, which is amazing! I thought my Eric Carle collection was complete, but I guess not :-) I'll definitely be looking for these to add to our summer reading list!
